kg potatoes, boiled

kg plain flour

tablespoons ghee, melted

cilantro leaves

to taste
METHOD
Mix
the flour, baking soda, salt and ghee. Using just
enough water, knead into a dough. Chop half the
potatoes & mash the rest of the potatoes.
Powder roasted coriander seeds, cardamoms, cinnamon,
cloves, peppercorns and1/3 cumin seeds. Heat 2
tablespoon oil and fry 1/3 cumin seeds, slightly
mashed potatoes, boiled peas, powdered masala,
dried mango powder and salt. Let the mixture cool
then add ginger, garlic, green chillies, cilantro
leaves & remaining cumin seeds. Divide the
dough into small portions and roll out in thin
rounds Cut into half. Fold into triangular shape.
Seal the cut edges with water & gently spoon
some potato mixture into this pocket. Seal the
edges with water. Deep fry in hot oil. Ready to
serve.
