SAMOSAS
1/2 kg potatoes, boiled

120 gms green peas, boiled and mashed

3/4 tsp dried mango powder

1/2 tsp chilli powder

1 tsp turmeric powder

1/4 tsp cardamon seeds

3/4 tbsp cumin seeds

1 tbsp coriander seeds

1 " cinnamon stick

1 green chillie

4 cloves

4 peppercorns

A pinch of baking soda

1/4 kg plain flour

4 tablespoons ghee, melted

few cilantro leaves

salt to taste

METHOD

Mix the flour, baking soda, salt and ghee. Using just enough water, knead into a dough. Chop half the potatoes & mash the rest of the potatoes. Powder roasted coriander seeds, cardamoms, cinnamon, cloves, peppercorns and1/3 cumin seeds. Heat 2 tablespoon oil and fry 1/3 cumin seeds, slightly mashed potatoes, boiled peas, powdered masala, dried mango powder and salt. Let the mixture cool then add ginger, garlic, green chillies, cilantro leaves & remaining cumin seeds. Divide the dough into small portions and roll out in thin rounds Cut into half. Fold into triangular shape. Seal the cut edges with water & gently spoon some potato mixture into this pocket. Seal the edges with water. Deep fry in hot oil. Ready to serve.
